One knife Crew. Many fish can be cleaned with a smaller knife, believe me. I actually use an electric knife when I have lots to clean. The knife does "not" have to have a #6 grind, although that's better for skinning fish. The #6 grind allows you to lay it flatter for that delicate work. A standard #7 works "almost" as well, but not quite.
One thing for sure: It's a whole lot easier to clean big fish with a small knife than little fish with a big one! You guys figure it out. That's why I gave you a couple of days. Most suggestions have surprised me, so far.

I agree that the Model 7 would be the right choice, but it seem a shame to use a #6 grind, and thin the blade so much, not to mention the removal of the top edge grind. the #7 is so close to the old grind model 8 it would seem possible to just sharpen the top edge and then you would have the best of both knives with a 5" blade.

I was thinking the same thing Max except maybe we could convince the shop to add teeth as de-scaler. This doesn't work on a #6 grind.
