Shop supplied walnut has a big range of figure and color/character. The best stuff that I have seen in posts coming from the shop has been Ironwood. Maple is okay; but my vote is Ironwood.

To mix things up a bit...

"If" we wanted to go with an ebony look (which some of the true antique bowies had (with black as the basic color with a possibility of a bit of brownish included), and a natural material instead of Micarta, I "might" have some African blackwood large enough for the bowie. I have had sticks of it for 45 years, fully cured, and can check the dimensions in about a month-and-a-half.

I think a natural material should go on this build, and like all the ideas so far.
