I like to get rotisserie chickens from Sam’s or Costco, de-bone ‘em, and freeze the meat in a vacuum bag.
Then, come home from school, get the taters, carrots, onions, celery, etc boiling. Then, when they get done, dump in the chicken and rotel and bring to a low simmer.
By then, the cornbread is done and it’s time to “go to town” on it!
Pretty quick way to have something pretty good for supper after a long day!
