I made this the other day, and it was a real hit.
Hatch Green Chili Shrimp Chowder
1 T olive oil
1 stick butter
4 slices bacon chopped small
1 medium onion chopped
3 celery stalks chopped small
1/3 Cup Green bell pepper chopped
1/3 Cup red bell pepper chopped
1/3 Cup yellow Bell pepper chopped
1 leak split, washed, chopped thin
4 garlic cloves smashed/chopped
1 lb diced potatoes
2 cans chopped Hatch Green Chilies
1 T thyme
1 T Fines herbs
1 bay leaf
1 T sea salt
3 T flour
1/2 C white wine
2 32oz chicken broth
1 T Worcester sauce
2 lbs Gulf shrimp peeled
1 pint heavy cream
Chopped parsley
In a large pot, add olive oil, butter and bacon, fry until almost crisp. Add onion, celery, leek, and chopped peppers, cook until soft. Add Hatch Green Chilies. Add herbs and salt. Sprinkle flour and cook until no white is showing. Add 2 chicken broth and wine. Stir until it thickens. Add potatoes and cook until just done. Add shrimp and just bring to a boil. Turn down to a simmer. Pour heavy cream and stir. Simmer for 5 minutes. Salt to taste. Put chopped parsley on top or chopped green onions. Oyster crackers are nice as well.
