Griswold cast iron is all I use including skillets and Dutch ovens. I used to have over 300 pieces, but sold down to about 20.

Wife loves those scallops (from Costco) as well. I can smell that just looking at the pic.

What kind of grease did you use? Olive oil or butter?

And did you cover the skillet while they simmered?

Over the years,butter has received a bad rap from the health industry.

A recent check shows that it is good for diabetics to use butter in cooking. Of course,olive oil and coconut oil are very good as well.

Nothing like eggs cooked in butter in a cast iron skillet.

Scallops were frozen, so after thawing, patted dry and salted both sides for about 20 minutes. Pealed off the tough muscle. Drizzled olive oil and butter into a faily hot skillet. Added the scallops and cooked until carmalized and browned, then turned to the other side. No other seasonings except for the fried rice. I also use a caper,garlic,shallot recipe for Angel hair spaghetti that's a winner. Shrimp works on both of these dishes also.
