hard to get them young'uns to eat peppers....all my grandchildren ask about, when I cook "is it "spicy"" I've got three little girls 10, 8 & 6...
cooked these up Sunday...they are called "Armadillo Eggs"(meat Church recipe)...to me...they turned out great, however a bit large for an appetizer, and they just don't seen right as a main.....

Rocky, I get asked the same question. I reckon I take after my Dad, and my Grandfather.

My "Papa" used to kill hogs and make sausage. He would throw the red pepper to it. When I was about 6 or so, I asked him why he made it so hot, he told me: "so nobody will eat it but me."

Yeah, known problem, might have even been posted here before.

Easy way to tell is to look at the "warning, cook to at least (blah blah) temp" disclaimer on the label. You won't see it on prime rib roasts, but you will on their tri-tip loins and smaller.

That's why I buy steaks from the local butcher when I can. Wife overrides me about once a month because she doesn't like ribeyes.

I know I've hit on this before, however cannot find the post....anyway was at Costco....well, always seem to be at Costco....anyway I'm back to "blade tenderizing"...I believe someone posted "old news" well, just to keep folks up to date, they are still at it, even on their Prime meat....if you have to "blade Tenderize" prime beef....what the heck!! then they tell you to cook it to 145....better that the old recommendation of 160....yeah, I'm going to by a prime rib eye, and cook it to 145.....NOT ON POUPOSE!!! COCKTAILS HAVE FORCED ME TO DO IT A FEW TIMES....

Oh no, cook it to 125, then wrap in foil for 20 minutes, rest, then unfoil for and rest for ano5 minutes.
