Looks like wrist thong is a very popular option, why?? I have a bunch of knives with WT holes in them, never use em. Obviously there's value when on the water, but I've tried using them when skinning deer and never saw the value, please tell me what I'm missing.

It was supposed to be for when your fighting, in olden times.
If it got wedged in a bone or whatever and was pulled from your hand you wouldn't lose it.
This is more of a lanyard style set up. A thong would be spun up tight to your wrist.
As for skinning you can let go of the knife if you need the use of both hands instead of dropping it on the ground. Just my take on it.

Chief is right, especially with bigger game like elk and moose, while inside the cavity, you can drop the knife, use 2 hands, and then easily recover your knife. Obviously around water, the safe thing to do is have a wrist thong. All of my users have wrist thongs, and I use them.
