That looks super delicious!! I can eat everything on that plate except for the rice (diabetic) but the rest is zero carbs.

Took a nutrition class for diabetics and was surprised to learn that wild rice was on the recommended list.

From healthline website:
Wild rice is a special type of grain that's chewy and tasty. It's higher in protein than regular rice and contains several important nutrients and an impressive amount of antioxidants. What's more, eating wild rice regularly may improve heart health and lower your risk of type 2 diabetes.

Wild rice is barely related to any other variety of rice, btw. You can't/shouldn't substitute another variety (e.g. brown rice) when your diet says "wild rice is OK."

Wild rice takes an hour to cook. 50mins under heat and 10mins off-heat. It absolutely won't cook properly in one of those "rice cookers." Been There, Tried That.

Other varieties of rice are like 20min jobs.

(Edit to add) I'm not disagreeing with David, btw. Just adding my $0.02 on top.

I know one thing.

I like Canadian Wild Rice better than ANY other kind of rice!

I had never heard of it before but my Bride had and she picked some up on our first trip to Ontario to go Walleye Fishing.

The next year, we picked up a LOT of it.

It’s about the only kind of rice we eat any more.

We use Trader Joe's because the local grocery stores don't stock it any more, and the price is one half of the specialty shops.
We make 8 oz each time and that lasts about 3 meals for the 2 of us.
We also use chicken broth instead of water, and we cook it for about an hour and a half.
It goes from hard grains to puffed moist grains almost instantly after that time.
I don't think you can overcook it if you keep water in the pot.

I can confirm that most grocery stores don't stock it (wild rice).

Sprouts has it in small pouches and they're a bit proud of it, based on the price.

I think I saw some in bulk at Winco a few months back. I was just there this morning and forgot to verify.

The herb garden was screaming for picking so today was a good day for meatballs, sausage and sauce.
We freeze in portions because it's a lot of work.
Everything is fresh except the San Marzano tomato's.

Warren, Looks scrumptious. I only get the sauce and meat these days. No Wild Pasta. String(Spaghetti) squash is a poor substitute.
