How 'bout some Center Cut Pork Chops & I.T.A. Sausage grilled/smoked over seasoned Red Oak coals while watching the coyotes, bobcats, squirrels, & milermore peckerwoods, etc. on a beautiful Sunday eve-nin' ???

My Bride has perfected a Baked Bean recipe with beans, bacon pieces, chopped onions, and maple syrup. She bakes them in an Aluminum pan in the oven and they almost look like Brownies when they come out.

Sometimes, I fix my Triple X Red Beans in my #10 Griswold Dutch Oven out in the shop. I cook them slowly (5 bubbles a minute) overnight.

The Triple X name comes from the 3 meats (ham on the bone, sausage, and Bacon pieces) in the recipe and the story of 3 young coaches who’s wives had put them on a “no meat” diet.

They got caught eating some on a Sunday afternoon when we were working at the Field House. Eventually all 3 got a divorce, hence, the name “Triple X” stuck.

They say that all great minds think alike! I do vary the ratios depending on chicken, beef, or pork. And, I switch up some on Brisket, Ribs, or Butt.
