I’m going to Costco one day next week. I’m gonna pick up some scallops.

We have done them before and they are GOOD!

There are about 30 scallops in the Costco bag, and I divide them into 3 zip lock bags. Unless you have a huge crowd, the smaller bunch works better for up to 4 people. P.us, if I make pasta or fried rice, I cut the scallops into 4's .

I cut the scallops into 4's after they are cooked, not before.

Don't quarter scallops until after because you need to brown them and also easier to cut up after they are cooked.

I made a quick trip to Galveston on Wednesday. I left here at 6:15 A.M. and got back at 8:00 P.M.

I took 3 ice chests and returned with them all FULL of "GOOD STUFF".

This was the first meal from that mission.

Jumbo Shrimp, Blackened Red Snapper on a bed of Canadian Wild Rice and smothered with Sauteed Bell Peppers, Onions, and Mushrooms.

And yes, my Bride used our #9 Griswold Skillet.

Fried skunk in a Griswold skillet would taste good, but would rather eat your Galveston seafood raid. I made fried chicken thighs,in my #7 Griswold Dutch oven, soaked in buttermilk, then dredged in flour and Don's Seafood seasoning. Plus dill potato salad. Yummy here too.
