1/2 onion chopped
4 Tablespoons Hatch green chilies
1 egg
1 Tablespoon Worcester sauce
1/2 Cup bread crumbs
1 garlic clove chopped
1/2 teaspoon salt and pepper
Mix well and form into patties
2 Tablespoons in a large cast iron skillet. Fry patties until browned on both sides, then remove.
Gravy
Slice 1 large onion
1/2 cup red wine
4 Tablespoons Hatch green chilies
Cook until onions are soft
3 Tablespoons flour
2 Tablespoons butter
Salt and pepper to taste
Make a roux with the flour and onions and add water slowly at a time to make the gravy, scraping the bits from the bottom of the skillet. Place patties back into skillet with gravy on both sides. Place in a 275 oven for 40 minutes. Serve with rice or mashed potatoes.

No I never worked at Orem's, but dated Patty Iliff whose family owned it at the time, and I would pick her up after her shift. They had great food though.
