From what I understand,beans have more protein and fiber than steak.

Beans,after a proper soak and rinse,have been the staple diet of many pioneers over the centuries.

W/O the sweeteners and stuff,have low carbs and are OK for diabetics.

I have a similar recipe, but not as many eggs. Also, I sprinkle some regular cornmeal in the hot grease and fry it for a minute, and then pour in the batter. That keeps the pone from sticking.

I saw the buttermilk ingredient in the recipe and it reminded me that, in the past, any time I see buttermilk as an an ingredient, I usually move on to another recipe since we don't drink it so any we would buy for a recipe would mostly end up wasted. Can you just substitute regular milk for buttermilk in a recipe? I'm thinking not since buttermilk has a very distinctive texture and flavor. Any thoughts or suggestions, other than to start drinking buttermilk. ;-)

They do make 1/4 pints just for recipes, but about 30-45minutes before you need it, place the called for amount of bmilk but use whole milk and add a tablespoon of white vinegar. It will curddle and work the same. Lemon juice works but takes longer.

Pap...the cornmeal in the pan sounds familiar....I wonder if I used to do that....it's funny how things change....if you do not write it down, you will loose it!!!

Anyone like salsa? I have a recipe that I got from a NM lady in the Lincoln County Courthouse Recorder's office in 1981. It was a Friday afternoon and I was the only public person there running title. One of the ladies had made some salsa and chips, and invited me to join them. It was the best salsa I had ever had and asked for her recipe. Been using it ever since.

2-3 cans Regular stewed tomatoes
1 can Rotella with green chilies
1/2 cup fine chopped onion
3-4 sprigs of spring onions chopped
1/2 cup chopped fresh cilantro
5-6 smashed and chopped garlic cloves
I small can of whole Hatch chilies chopped


Chop all of the fresh stuff and the green chilies. This is a mild hot recipe so use jalapenos if you want it hotter.

Most important. The stewed tomatoes need to be pulsed 2-3 times in a blender. More than that will turn it to mush, not good. Do 1 can at a time. The Rotella, just dump in as is. Mix it all and salt, about 1/4 tsp or to taste. Using a big spoon, mix well and taste. It takes about an hour for the garlic to have an effect, but even fresh, with good chips, it's hard to stop eating it. The stewed tomatoes make it a delicious different flavor. Try it.

I love ice cold buttermilk with my supper when I’ve been working outside in the heat all day.

And for lunch when I’m working outside, the night before:

1. Skin 4 large home Grown Tomaters and a large onion.
2. Put them in the blender with a couple of jalapeños, shot glass of dill pickle juice, salt, and black & cayenne pepper to taste.
3. Blend until desired texture.
4. Place in refrigerator overnight.
5. Sip while ice cold.
