I have ordered them with all red spacers before. I have also had a set or two made with black micarta handles. I don't know about the brass reduced hilts but I feel confident it's doable. You will not be able to duplicate the handle "shape" of the chef's knife or the thickness of the brass hilt as those are unique to the Chef's knife.
I have ordered (for my order coming out just before the "Blade" show) a Chef's knife and a "Large Filet" knife made up for RKS folks to see at the RKS meeting. The #6-9", Large Filet has a brass single hilt and a black micarta "Border Patrol" handle, along with all red spacers. That's about as close as I could match them up...Hope this helps.

Not only possible but I have done it. Before the 5 option limit I did it even more. I orderd one for myself with a nickel silver single hilt, stainless, thumb notches, aluminum & black spacers, stag handle, nickel silver butt plate, wrist thong and a black sheath. When I received it I thought it was the ugliest thing I had ever dreamt up. Sold it the following weekend at a gun & knife show!
I will tell you that it would have been an excellent "gutter" with that blade design...but so is a "Small Gambler" with the reduced hilt. Hope this helps.
