I was just thinking out loud about when I have to carve a roast. A flat surface on the left side would help me to keep the slices the same thickness.

You got a nice knife. It is one of my favorites. But I never got the longer blade.

My son lives in Japan. He says that they make a knife that will cut sushi precisely and paper thin. They use a steel called honyaki.

It is ground and honed like you are describing. He says they are pricey but they will slice thin and straight. Check it out.
