I realize that this is not as exciting a topic as many others, however I do need some insights from those using these implements in and around the kitchen.

I am looking for a set that is under $500 and has been tried and true by the Members responding. Also, I would prefer knives that are not made in China, or any other communist country.

As I peruse the internet I see names like J.A. Henkels, only to find that they are produced in China. Wusthof are highly touted, however are dinged by users as lower quality than they used to be and are no longer made in Germany or Spain as labeled in some ads but in China as well. In short, I am confused.

The insights of actual users will be helpful.

In both Henckels and Wusthof, look for their "Classic" lines, those are (still) made in Spain and Germany, respectively.

MAC knives
out of Japan....VERY good and reasonably priced....been using them for 40+ years....do your homework....you will not be disappointed

I've used a few kitchen knives over the years. My current favorite is an Akifusa (santoku blade) with Western-style handle. It has a San Mai blade (hard center steel sandwiched between softer outer layers). I agree that Mac is a good brand, as are Hattori, Korin, and Misono. These are not cheap, so you might want to look at Victorinox--they are used by a lot of professionals.

Warther, made in Dover, Ohio, is my go to kitchen knife maker. Been to their shop, they are good friends with the Randall family too. Highly recommended.

I've had and used Chicago Cutlery over 40 years.

I use Spyderco.
They are local and will sharpen for free if the logo is still visible. They have even replaced a serrated edged one when they could no longer sharpen it.
I have used and been pleased with them for about 30 years now.
