For "name etching", RMK web site says it's limited to one line for small knives and two lines for large knives. Would a Model 15 be a large or small knife for this purpose? I'm thinking small but I'm usually wrong. A friend is planning to get a 15 for a family member graduating from the Air Force Academy and wants to know the limit on the etching. Thanks.

2 lines of etching are available on the #15.

Only with the exception of the "Copper Mini" (which had a #25 styled handle, green micarta center) all #27 minis are the original (13 spacer) configuration.

Does the N25 option include NS1 and aluminum butt-cap by default?

Also, does the B25 option include BH1 and brass butt-cap?

Yes sir, we try not to mix them up, however, we have made B25 with aluminum spacers and vice/versa with N25 by mistake!!
